Gifts from the Garden

There is nothing more satisfying than growing your own vegetable garden and harvesting. It is late summer now and my tomato, cucumber, zucchini and bean plants are finally loaded with fresh produce  to enjoy.
Baby Eggplant: 
 Okra:
 Tomato and Cucumber Salsa,cheese and shredded lettuce served in colored peppers for a Taco party:
 Ceramic Taco Holders for the corn tortillas:
Taco Meat filling in a lemon-shaped platter:

 Aguas Frescas, a popular Mexican fruit drink served in Mason jars. Click HERE to view the recipe for Aguas Frescas
 Fresh Tomato-Cucumber Salsa Recipe:
 
One and a half cup of chopped, seeded tomato
One cup of chopped, seeded cucumber
One third cup of thinly sliced green onions
A quarter cup of fresh chopped cilantro 
3Tbsp. of Lime juice
1/4 tsp of salt
In a bowl combine all the above ingredients.
Serve the salsa in peppers,decorated with party picks:
 Grilled Corn served with green and red tomato relish:
 Peel back the corn husks and remove the corn silk. Boil and grill the corn. Spread butter on the corns. In a separate bowl combine chopped green tomato,red tomato, pinch of salt and a dash of black pepper. Top the corn with the tomato mixture,fresh basil leaves and feta cheese (optional).   10. HI Poppy! Forsy of all I forgot to get back to you about my pillows and I apologize!!! The koi pillow I found this year at Burlington Coat Factory!!!!!!!!!!!!!!!!! Can you believ that? It was the only one and only $6.99!!!!!!!!!!!! I grabbbed it FAST! The other 2 shell pillows I forget where I got them, it has been several years. Now, this table scape is FABULOUS!!!!   15. That last photo of the corn has me drooling. That is the prettiest corn I've ever seen. Your tablescape is darling. I love the colors and how you used the peppers to hold the salsa. The Aquas Frescas looks delicious in the Mason jars. I keeping the recipes. Yum.

  20. Your produce looks so healthy and beautiful. We had a large garden. About the only things still producing are the okra and eggplant. We had a very dry and hot summer in South Carolina. It was hard to keep everything watered. Your tacos looks delicious!

  30. This look delicious! I love stuffed peppers out of the garden. I had everything come up this year but squash. All of the squash bloomed and then produced no fruit. I don't know what happened.:( Thanks for linking it to Home Sweet Home!
